Peanut butter cookies were invented in the United States and became popular during the early 20th century.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use the bottom of a glass to flatten each ball slightly.

Bake for 8-10 minutes, or until the edges are golden brown. Remove from the oven and let cool on the baking sheet for 5 minutes.

Transfer the cookies to a wire rack to cool completely.

Once the cookies are completely cool, use red icing gel to draw Santa's hat on each cookie. Use miniature chocolate chips for the eyes and a miniature marshmallow for the pom-pom on the hat.

Allow the icing to set before serving.
