French Mushroom and Scallion Soup
Mushroom soup has been a popular dish in French cuisine for centuries and is often served as a starter in traditional French meals.

Sprinkle flour over the mushrooms and scallions, and cook for 1 minute, stirring constantly.

Slowly pour in vegetable broth while stirring continuously. Bring to a simmer and cook for 10 minutes.

Stir in milk, salt, black pepper, and fresh thyme. Simmer for an additional 10 minutes.

Remove from heat and let the soup rest for 5 minutes.

Use an immersion blender to blend the soup until smooth.

Stir in heavy cream and adjust seasoning if needed.
