French Mikado Chocolate Biscuit
Ingredients
Instructions
-
Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
-
Melt the dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and well combined.
-
In a separate bowl, whisk the egg whites until stiff peaks form. Gradually add the granulated sugar, whisking continuously, until glossy and thick.
-
Gently fold the melted chocolate mixture into the egg whites using a spatula. Be careful not to overmix.
-
Sift the all-purpose flour over the chocolate mixture and fold until just combined.
-
Spoon the batter into a piping bag fitted with a plain round tip. Pipe 8-inch long strips onto the prepared baking sheet, leaving space between each strip.
-
Sprinkle the almond slices over the piped batter.
-
Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
-
Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
-
Once cooled, store in an airtight container for at least 1 hour to allow the biscuits to firm up before serving.
