Instructions

  1. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Melt the dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth and well combined.
  3. In a separate bowl, whisk the egg whites until stiff peaks form. Gradually add the granulated sugar, whisking continuously, until glossy and thick.
  4. Gently fold the melted chocolate mixture into the egg whites using a spatula. Be careful not to overmix.
  5. Sift the all-purpose flour over the chocolate mixture and fold until just combined.
  6. Spoon the batter into a piping bag fitted with a plain round tip. Pipe 8-inch long strips onto the prepared baking sheet, leaving space between each strip.
  7. Sprinkle the almond slices over the piped batter.
  8. Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
  9. Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Once cooled, store in an airtight container for at least 1 hour to allow the biscuits to firm up before serving.
