Macarons are said to have been introduced to France in the 16th century by Catherine de’ Medici’s Italian pastry chefs.

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the almond flour and powdered sugar. Pulse until well combined and fine.
  3. In a mixing bowl, beat the egg whites until frothy. Gradually add the granulated sugar while continuing to beat. Beat until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites. Add the vanilla extract and food coloring if desired.
  5. Transfer the mixture to a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter a few times to remove any air bubbles. Let the macarons rest for 30 minutes.
  7. Bake for 15 minutes, or until the macarons are set and have developed feet.
  8. Remove from the oven and let cool completely on the baking sheet.
  9. Once cooled, carefully remove the macarons from the parchment paper.
  10. Pair up the macaron shells of similar size and shape. Fill one shell with buttercream or ganache filling and sandwich with another shell.
  11. Store the macarons in an airtight container in the refrigerator for at least 24 hours before serving. This allows the flavors to develop.
