Shortbread is a traditional Scottish biscuit with a crumbly texture that originated in the 12th century.

In a mixing bowl, cream together butter and powdered sugar until light and fluffy.

Add vanilla extract and mix well.

Gradually add all-purpose flour and mix until a dough forms.

Divide the dough into 12 equal portions and shape each portion into a log.

Make a small indentation in the center of each log and fill it with a tablespoon of jam.

Preheat the oven to 180°C (350°F).

Place the filled logs on a baking sheet lined with parchment paper.

Bake for 12-15 minutes or until the edges are golden brown.

Remove from the oven and let them cool for 5 minutes.

Transfer to a wire rack and let them cool completely.
