Fig bars are believed to have originated in ancient Egypt and were later popularized in the United States by the brand ‘Fig Newtons’.

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the dried figs until finely chopped.
  3. In a large bowl, combine the chopped figs, all-purpose flour, granulated sugar, unsalted butter, egg, vanilla extract, baking powder, and salt. Mix until well combined.
  4. Press half of the mixture into the bottom of a greased 9x9-inch baking dish.
  5. Spread the fig jam evenly over the pressed mixture.
  6. Crumble the remaining dough over the fig jam layer.
  7. Bake for 25 minutes, or until golden brown.
  8. Allow to cool completely before cutting into bars.
