  1. Heat vegetable oil in a large frying pan or wok over medium heat.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add diced carrots and cook for 2 minutes.
  4. Add frozen peas and cook for another 2 minutes.
  5. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked through.
  6. Add cooked rice to the pan and stir to combine with the vegetables and eggs.
  7. Drizzle soy sauce over the rice and stir well to evenly distribute the sauce.
  8. Season with salt and black pepper to taste.
  9. Cook for an additional 2-3 minutes, stirring occasionally.
  10. Remove from heat and let the fried rice rest for 5 minutes before serving.
