  1. Preheat the oven to 180°C (355°F).
  2. Cut the chicken into pieces and season with salt, black pepper, paprika, cinnamon, cumin, turmeric, and cayenne pepper.
  3. Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onions, minced garlic, and sliced bell peppers. Saute until the onions become translucent.
  5. Add the tomatoes, eggplant, zucchini, and potatoes to the skillet. Mix well.
  6. Place the chicken pieces back into the skillet, nestled among the vegetables.
  7. Pour vegetable stock over the chicken and vegetables. Season with salt and black pepper.
  8. Cover the skillet and transfer it to the preheated oven. Bake for 45 minutes.
  9. Remove the cover and bake for an additional 15 minutes, or until the chicken is cooked through and the vegetables are tender.
  10. Sprinkle fresh parsley over the martinowitz before serving.
