Scalloped Potatoes
Scalloped potatoes are also known as potatoes au gratin in French cuisine.

Preheat the oven to 350°F (175°C).

Peel and thinly slice the potatoes.

In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened.

Stir in the flour and cook for 1 minute.

Gradually whisk in the milk and cook until thickened.

Remove the saucepan from heat and stir in the shredded cheddar cheese until melted.

Season with salt and black pepper.

Layer half of the sliced potatoes in a greased baking dish. Pour half of the cheese sauce over the potatoes.

Repeat with the remaining potatoes and cheese sauce.

Cover the baking dish with foil and bake for 45 minutes.

Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

Let the scalloped potatoes rest for 10 minutes before serving.
