Melon bread, also known as ‘melon pan’, is a popular Japanese sweet bread that is not actually flavored like melon. It gets its name from the characteristic melon-like appearance created by the criss-cross patterns on top of the bread.

  1. In a mixing bowl, combine flour, sugar, yeast, and salt.
  2. Add softened butter, milk, egg, and melon extract. Mix until a dough forms.
  3. Knead the dough for about 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rest for 1 hour.
  5. Punch down the dough and divide it into 8 equal portions.
  6. Shape each portion into a round ball and flatten slightly.
  7. Place the dough balls on a baking sheet lined with parchment paper.
  8. Make criss-cross patterns on top of each dough ball using a knife.
  9. Brush the dough balls with milk and sprinkle melon seeds on top.
  10. Let the dough balls rise for 30 minutes.
  11. Preheat the oven to 180°C (350°F) and bake for 20 minutes or until golden brown.
  12. Remove from the oven and let cool on a wire rack.
  13. Serve and enjoy!
