Preheat the oven to 180°C (350°F). Grease a baking dish.

In a bowl, combine the chopped dates and boiling water. Stir in baking soda and let it sit for 5 minutes.

In a separate bowl, cream together the butter and brown sugar. Beat in the eggs one at a time.

In another bowl, mix the flour and baking powder. Gradually add the flour mixture to the butter mixture, alternating with the date mixture. Stir in vanilla extract.

Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

While the pudding is baking, prepare the toffee sauce. In a saucepan, combine the cream, dark brown sugar, butter, and golden syrup. Cook over medium heat, stirring constantly, until the sauce thickens.

Once the pudding is baked, remove it from the oven and let it rest for 10 minutes. Pour the toffee sauce over the warm pudding.

Serve the sticky toffee pudding warm with additional toffee sauce and a scoop of vanilla ice cream, if desired.
