Preheat the oven to 180°C (350°F).

Peel and core the apples, then slice them into thin wedges.

In a saucepan, heat the Lindisfarne Mead over medium heat until it starts to simmer.

Add the apple slices to the Mead and cook for 5 minutes, or until the apples are tender.

In a separate saucepan, heat the double cream over low heat until warm.

In a mixing bowl, whisk together the caster sugar, egg yolks, and cornflour until well combined.

Slowly pour the warm cream into the sugar and egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens.

Remove the saucepan from the heat and stir in the vanilla extract.

In a food processor, pulse the digestive biscuits until they form fine crumbs.

Melt the butter and mix it with the biscuit crumbs.

Press the biscuit mixture into the bottom of a greased baking dish.

Pour the apple slices and Mead over the biscuit base.

Pour the cream mixture over the apples.

Bake in the preheated oven for 20 minutes, or until the top is golden and set.
