Shape the mixture into egg-shaped balls and place them on a parchment-lined baking sheet.

Freeze the peanut butter balls for about 30 minutes.

In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil in the microwave in 30-second intervals, stirring after each interval, until smooth.

Dip the frozen peanut butter balls into the melted chocolate using a fork or dipping tool, allowing any excess chocolate to drip off.

Place the chocolate-coated peanut butter eggs back on the baking sheet and sprinkle them with colorful sprinkles.

Chill the eggs in the refrigerator for at least 1 hour, or until the chocolate is set.
