Easy Cheesy Red Beans and Rice
Red beans and rice is a popular dish in Louisiana Creole cuisine and is traditionally served on Mondays as a way to use up leftover meat from Sunday’s meal. It is believed to bring good luck and prosperity.

In a large pot, sauté onions, bell peppers, celery, and garlic until softened.

Add Cajun seasoning, paprika, and cayenne pepper to the pot and cook for another minute.

Stir in the red beans, diced tomatoes, vegetable broth, salt, and black pepper.

Bring the mixture to a boil and then reduce heat to a simmer. Cover the pot and let it cook for about 30 minutes, or until the beans are tender.

While the beans are simmering, cook the white rice according to package instructions.

Once the beans are tender, use a potato masher to mash some of the beans for a thicker texture.

Stir in the cooked rice and cheddar cheese until melted and well combined.
