  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Drizzle the caramel sauce over the top of the cream cheese mixture. Use a knife to swirl the caramel into the cream cheese mixture.
  6. Sprinkle the chopped pecans over the top.
  7. Bake for 60 minutes or until the center is set.
  8. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and let it cool completely.
  10. Refrigerate for at least 2 hours or overnight.
  11. Serve chilled with whipped cream and additional caramel sauce, if desired.
