Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the lemon zest, lemon juice, vanilla extract, and egg. Pour the wet ingredients into the flour mixture and stir until just combined.

Divide the dough into 8 equal pieces and shape each piece into a ball. Place the balls on the prepared baking sheet.

Use your thumb or the back of a spoon to make an indentation in the center of each ball. Fill each indentation with a tablespoon of lemon curd.

Bake the scones for 12-15 minutes, or until they are golden brown.

Remove the scones from the oven and let them cool on a wire rack for 10 minutes before serving.
