Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

Add mushrooms and cook until they release their liquid, about 10 minutes.

Add barley, thyme, bay leaf, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until barley is tender.

Remove bay leaf and thyme sprigs. Serve hot.
