In a mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the sugar, egg yolks, sour cream, and vanilla extract. Gradually add this mixture to the flour mixture, stirring until a soft dough forms.

Divide the dough into two portions, wrap each in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

On a lightly floured surface, roll out one portion of dough to about 1/8 inch (3 mm) thickness. Cut into circles using a round cookie cutter.

Place the circles onto the prepared baking sheet and spoon a small amount of fruit preserves into the center of each circle.

Roll out the remaining dough and cut into circles as before. Place these circles on top of the preserves, pressing the edges together to seal.

Bake for 12-15 minutes, or until lightly golden.

Allow the kolacky to cool on a wire rack before serving.
