Creme Brulee, meaning ‘burnt cream’ in French, is a classic French dessert that consists of a rich custard base topped with a layer of caramelized sugar.

Preheat the oven to 325°F (163°C).

In a saucepan, heat the heavy cream, half of the sugar, and vanilla extract over medium heat until it starts to simmer.

In a separate bowl, whisk the egg yolks and the remaining sugar until well combined.

Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.

Strain the mixture through a fine-mesh sieve into a measuring cup.

Divide the mixture evenly among four ramekins.

Place the ramekins in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins.

Bake for 30-35 minutes or until the custard is set around the edges but still slightly jiggly in the center.

Remove the ramekins from the water bath and let them cool to room temperature.

Refrigerate for at least 2 hours to chill and set.

Sprinkle about 1 tablespoon of granulated sugar evenly over the top of each custard.

Use a kitchen torch to caramelize the sugar until golden and bubbly.

Let the caramelized sugar harden for a few minutes before serving.
