Creamy Vegetarian Leek Soup
Leeks are a member of the onion family and have been cultivated for thousands of years. They were prized by the ancient Egyptians and Romans for their flavor and medicinal properties.

Wash and chop the leeks.

Heat butter in a large pot and sauté the leeks and garlic until soft.

Peel and dice the potatoes, then add them to the pot.

Pour in the vegetable broth and bring to a boil.

Reduce heat and simmer for 20 minutes, or until the potatoes are tender.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream, salt, and black pepper.
