  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the carrot and potato and cook for 5 minutes.
  3. Add the vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  4. In a blender, combine the cooked vegetables, peanut butter, coconut milk, lime juice, salt, and black pepper. Blend until smooth.
  5. Return the soup to the pot and heat gently.
  6. Serve hot, garnished with cilantro.
