Shimmering Raspberry Shortcake

Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs.

In a separate bowl, beat the egg, vanilla extract, and milk together. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

Pour the batter into the prepared cake pan and spread it evenly. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Once the cake has cooled, slice it in half horizontally. Place the bottom half on a serving plate.

Spread a layer of fresh raspberries on top of the bottom cake layer. Sprinkle with powdered sugar.

Place the top half of the cake on top of the raspberries. Dust with more powdered sugar.
