  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine the coconut milk and sweetened condensed milk. Heat over medium heat until warm, stirring occasionally.
  3. In a separate bowl, whisk the eggs and vanilla extract together. Slowly pour the warm milk mixture into the egg mixture, whisking constantly.
  4. In a small saucepan, heat the granulated sugar and water over medium heat until the sugar dissolves and turns into a caramel. Pour the caramel into a 9-inch round baking dish, swirling to coat the bottom.
  5. Pour the flan mixture into the caramel-coated baking dish.
  6. Place the baking dish in a larger roasting pan. Fill the roasting pan with enough hot water to reach halfway up the sides of the baking dish.
  7. Carefully transfer the roasting pan to the preheated oven. Bake for 40-45 minutes, or until the flan is set but still slightly jiggly in the center.
  8. Remove the flan from the water bath and let it cool to room temperature. Then, refrigerate for at least 2 hours, or overnight, to allow the flan to set completely.
  9. To serve, run a knife around the edges of the baking dish to loosen the flan. Place a serving plate on top of the dish and carefully invert the flan onto the plate. The caramel sauce will drizzle over the top.
  10. Slice and serve the creamy coconut flan chilled.
