Creamy Broccoli Soup

In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Add the broccoli florets and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the broccoli is tender.

Use an immersion blender or transfer the soup to a blender to blend until smooth and creamy.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

Simmer for an additional 5 minutes to heat through.
