Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the butter into small cubes and add it to the flour mixture. Use your fingertips or a pastry cutter to rub the butter into the flour until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  5. Pour the cream mixture into the flour mixture and stir until just combined. Be careful not to overmix.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together.
  7. Pat the dough into a circle about 1 inch thick. Use a sharp knife to cut the circle into 8 wedges.
  8. Transfer the scones to the prepared baking sheet and brush the tops with a little extra cream.
  9. Bake for 12-15 minutes, or until the scones are golden brown.
  10. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
