Sparkly Red Velvet Brownie Bites
Red velvet cake originated in the United States and became popular during the Victorian era. The vibrant red color is traditionally achieved by using beetroot juice or red food coloring.

Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a separate large bowl, mix together the melted butter and granulated sugar until well combined.

Add the eggs, one at a time, mixing well after each addition.

Stir in the red food coloring and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the white chocolate chips.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Remove from the oven and let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, dust the brownie bites with powdered sugar and sprinkle with edible glitter.
