  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
  3. Remove from heat and add flour all at once. Stir vigorously until the mixture forms a ball.
  4. Return the saucepan to low heat and cook for 1-2 minutes, stirring constantly.
  5. Transfer the mixture to a mixing bowl and let it cool for a few minutes.
  6. Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
  7. Transfer the dough to a piping bag fitted with a round tip.
  8. Pipe small mounds onto the prepared baking sheet, leaving space between each puff.
  9. Bake for 20-25 minutes or until golden brown.
  10. Remove from the oven and let the puffs cool completely.
  11. For the vanilla pastry cream, heat milk in a saucepan until steaming.
  12. In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
  13. Slowly pour the hot milk into the egg mixture, whisking constantly.
  14. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
