Ricotta and Cherry Strudel

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the ricotta cheese, sugar, almond flour, vanilla extract, and lemon zest.

Lay one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat with 5 more sheets, brushing each with butter.

Spread the ricotta mixture evenly over the phyllo dough, leaving a border around the edges.

Arrange the cherries on top of the ricotta mixture.

Roll up the phyllo dough tightly, starting from the shorter side, to form a strudel.

Place the strudel on a baking sheet lined with parchment paper.

Brush the top of the strudel with melted butter.

Bake in the preheated oven for 35-40 minutes, or until golden brown.

Remove from the oven and let it rest for 10 minutes.

Dust with powdered sugar before serving.
