  2. In a mixing bowl, combine the ricotta cheese, sugar, almond flour, vanilla extract, and lemon zest.
  3. Lay one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat with 5 more sheets, brushing each with butter.
  4. Spread the ricotta mixture evenly over the phyllo dough, leaving a border around the edges.
  5. Arrange the cherries on top of the ricotta mixture.
  6. Roll up the phyllo dough tightly, starting from the shorter side, to form a strudel.
  7. Place the strudel on a baking sheet lined with parchment paper.
  8. Brush the top of the strudel with melted butter.
  9. Bake in the preheated oven for 35-40 minutes, or until golden brown.
  10. Remove from the oven and let it rest for 10 minutes.
  11. Dust with powdered sugar before serving.
