Cream of Morel Mushroom Soup
Morel mushrooms are highly prized for their unique flavor and are considered a delicacy in many cuisines.

Clean the morel mushrooms and slice them.

In a large pot, melt the butter over medium heat.

Add the onion and garlic cloves, and sauté until translucent.

Sprinkle the flour over the onions and garlic, and cook for 1 minute.

Slowly pour in the vegetable broth while whisking continuously.

Add the sliced morel mushrooms, salt, and black pepper.

Bring the soup to a simmer and cook for 20 minutes.

Remove from heat and let it cool slightly.

Use an immersion blender or regular blender to puree the soup until smooth.

Return the soup to the pot and stir in the heavy cream.

Heat the soup over low heat until warmed through.

Serve hot, garnished with chopped chives.
