Rinse the lentils under cold water.

In a large pot, heat some olive oil over medium heat.

Add the chopped onion and minced garlic. Sauté until fragrant.

Add the carrot and celery. Cook for a few more minutes.

Add the lentils, vegetable broth, bay leaf, thyme, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 25-30 minutes, until the lentils are tender.

Remove the bay leaf and blend the soup until smooth using an immersion blender.

Stir in the heavy cream and heat through.

Serve hot, garnished with fresh parsley.
