Preheat the oven to 375°F (190°C).

In a small bowl, combine the flour, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the creamed mixture and mix well.

Stir in the dried cranberries and chopped cashews.

Drop rounded tablespoonfuls of dough onto ungreased baking sheets.

Bake for 10-12 minutes or until lightly golden brown.

Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
