Preheat the oven to 425°F (220°C).

In a bowl, mix the sliced strawberries with sugar and set aside.

In a separate bowl, combine flour, baking powder, and salt.

Cut in the butter until the mixture resembles coarse crumbs.

Stir in the milk and vanilla extract until just combined.

Drop spoonfuls of the dough onto a baking sheet.

Bake for 12-15 minutes or until golden brown.

Remove from the oven and let cool for 10 minutes.

Split the shortcakes in half horizontally.

Place the bottom half on a plate and spoon some strawberries onto it.

Top with whipped cream and place the other half of the shortcake on top.

Garnish with more strawberries and mint leaves.
