Ingredients
Instructions
-
In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
-
Gradually add cold water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
-
Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter.
-
Transfer the rolled-out dough to a baking sheet lined with parchment paper.
-
In a separate bowl, combine the cranberries, apples, cornstarch, granulated sugar, lemon juice, and vanilla extract. Toss until the fruit is coated.
-
Spoon the fruit mixture onto the center of the rolled-out dough, leaving a border around the edges. Fold the edges of the dough over the fruit, creating pleats as you go.
-
Brush the beaten egg over the edges of the dough and sprinkle turbinado sugar on top.
-
Bake for 40-45 minutes, or until the crust is golden brown and the fruit is bubbling.
-
Allow the crostata to cool for 15 minutes before serving. Serve warm or at room temperature.
