  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, ground cinnamon, and honey.
  4. Gradually add the sour cream and flour, mixing until just combined. Pour the mixture over the crust in the springform pan.
  5. Bake for 55-60 minutes or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove from the oven and let it cool completely. Refrigerate for at least 2 hours before serving.
  8. Serve chilled and enjoy!
