Couscous Skillet Paella
Paella is a traditional Spanish dish that originated in the Valencia region, but this version with couscous is a modern twist on the classic recipe.

Heat olive oil in a large skillet over medium heat. Add the onion, bell pepper, and garlic, and sauté until softened.

Add the tomato, smoked paprika, turmeric, and cayenne pepper. Cook for 2 minutes.

Stir in the vegetable broth and bring to a boil.

Add the couscous and frozen peas. Stir well, cover, and remove from heat. Let it rest for 5 minutes.

Fluff the couscous with a fork and squeeze the lemon juice over it. Season with salt.

Garnish with fresh parsley before serving.
