  1. Preheat the oven to 350°F (175°C).
  2. Cut the bread into small cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes or until crisp.
  3. In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrot. Cook until the vegetables are softened.
  4. In a large mixing bowl, combine the toasted bread cubes, cooked vegetables, dried cranberries, dried apricots, pecans, fresh herbs, salt, and pepper. Mix well.
  5. Gradually add the vegetable stock to the bread mixture, stirring until the bread is moistened but not soggy.
  6. Transfer the mixture to a greased baking dish and cover with foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes or until the top is golden brown.
  8. Allow the stuffing to rest for 10 minutes before serving.
