Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion becomes translucent.

Add sliced cabbage, diced tomatoes, bay leaf, salt, black pepper, and paprika to the pot. Stir well to combine.

Pour water into the pot and bring it to a boil. Once boiling, reduce the heat to low and let it simmer for about 30 minutes, or until the cabbage is tender.

Remove the bay leaf and serve the simmered cabbage and tomatoes hot.
