  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a separate mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture over the crust. Drizzle half of the caramel sauce on top. Repeat with the remaining cream cheese mixture and caramel sauce.
  5. Bake for 50-60 minutes or until the center is set. Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.
  6. Let the cheesecake cool completely on a wire rack. Refrigerate for at least 2 hours or overnight.
  7. Before serving, remove the sides of the springform pan. Top the cheesecake with whipped cream and toasted pecans.
  8. Slice and serve.
