Preheat the oven to 375°F (190°C). Cook the elbow macaroni according to package instructions, then drain and set aside.

In a large skillet, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the diced apple and cook for another 3 minutes.

Sprinkle the flour over the onion and apple mixture, stirring constantly for 1 minute. Slowly pour in the milk while stirring, then cook until the mixture thickens, about 3-5 minutes.

Remove the skillet from heat and stir in the shredded cheddar cheese until melted. Season with salt and pepper.

In a separate bowl, prepare the cornbread mix according to package instructions. Stir in the egg.

In a greased baking dish, spread the cooked macaroni evenly. Pour the cheese sauce over the macaroni. Spoon the cornbread mixture over the cheese sauce, spreading it out evenly.
