Corn and Mushroom Crepes

In a pan, saute the onion and garlic in olive oil until translucent.

Add the mushrooms and cook until they release their moisture.

Add the corn kernels, spinach, salt, and black pepper. Cook until the spinach wilts.

Preheat the oven to 350°F (175°C).

Place a spoonful of the vegetable mixture onto each crepe and roll it up.

Place the rolled crepes in a baking dish.

Sprinkle grated cheese on top.

Bake for 15 minutes or until the cheese is melted and bubbly.
