Preheat the oven to 375°F (190°C).

Cook the barley according to package instructions and set aside.

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the cooked barley, thyme, salt, and black pepper to the skillet. Stir to combine.

In a separate bowl, whisk together the eggs and milk. Pour the mixture over the barley mixture in the skillet.

Stir in the gruyere cheese and pecans.

Transfer the mixture to a greased baking dish.

Bake for 30-35 minutes, or until the top is golden brown.
