The Cookie Monster Cupcakes were inspired by the popular Sesame Street character, Cookie Monster, known for his love of cookies.

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Add the blue gel food coloring and mix until the batter is evenly colored.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Remove from the oven and let cool completely.
  10. Once the cupcakes are cooled, use a small knife to cut a small hole in the center of each cupcake.
  11. Place a chocolate chip cookie into each hole.
  12. In a separate bowl, mix together the vanilla frosting and blue food coloring until desired color is achieved.
  13. Frost the cupcakes with the blue frosting.
  14. Attach two candy eyes to each cupcake using a small amount of frosting.
  15. Serve and enjoy!
