Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a small bowl, combine the flour, instant coffee, baking powder, and salt.

In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the mini chocolate chips.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 8-10 minutes or until the edges are lightly golden.

Remove from the oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Once the cookies are completely cooled, scoop a small amount of vanilla ice cream onto the flat side of one cookie, then sandwich it with another cookie.

Roll the edges of the ice cream sandwich in chocolate sprinkles.

Repeat with the remaining cookies and ice cream.
