Coffee and Cocoa Coffee Cake
Coffee cake is not typically made with coffee, but it is called coffee cake because it is meant to be enjoyed with a cup of coffee!

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition.

Stir in the cooled brewed coffee until well combined.

In a separate bowl, sift the cocoa powder and gradually add it to the batter, mixing well.

Add the sour cream and vanilla extract, and mix until smooth.

Gradually add the dry flour mixture to the batter, mixing until just combined.

Pour the batter into the prepared cake pan and spread it evenly.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes.

Transfer the cake to a wire rack to cool completely.

Once cooled, dust the top of the cake with confectioners' sugar.
