Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut and chopped walnuts.
  5. Divide the dough in half and shape each half into a 12-inch (30 cm) long log. Place the logs on the prepared baking sheet, leaving space between them.
  6. Bake for 25-30 minutes, or until the logs are golden brown and firm to the touch. Remove from the oven and let cool on the baking sheet for 10 minutes.
  7. Reduce the oven temperature to 325°F (160°C). Carefully transfer the logs to a cutting board and slice them diagonally into 1-inch (5 cm) thick slices.
  8. Place the slices cut-side down on the baking sheet and bake for an additional 10 minutes.
  9. Remove from the oven and let cool completely before serving.
