  1. Preheat the oven to 325°F (163°C).
  2. In a medium saucepan, combine the coconut milk and heavy cream over medium heat. Bring the mixture to a simmer.
  3. In a separate bowl, whisk together the egg yolks, sugar, vanilla extract, and salt.
  4. Slowly pour the warm coconut mixture into the egg mixture, whisking continuously.
  5. Strain the mixture through a fine-mesh sieve into a pouring pitcher.
  6. Divide the mixture evenly among 4 ramekins or oven-safe jars.
  7. Place the filled ramekins/jars in a baking dish and fill the dish with enough hot water to reach halfway up the sides of the ramekins/jars.
  8. Carefully transfer the baking dish to the preheated oven and bake for about 30 minutes, or until the pots de creme are set but still slightly jiggly in the center.
  9. Remove the ramekins/jars from the water bath and let them cool to room temperature.
  10. Refrigerate the pots de creme for at least 2 hours, or until chilled and set.
  11. Before serving, sprinkle shredded coconut on top of each pot de creme.
  12. Serve and enjoy!
