Preheat the oven to 350°F (175°C).

In a saucepan, heat the coconut milk until hot but not boiling.

In a mixing bowl, whisk together the eggs, sugar, and vanilla extract.

Slowly pour the hot coconut milk into the egg mixture while continuously whisking.

Dissolve the instant coffee in water and add it to the mixture.

Strain the mixture to remove any lumps.

Pour caramel sauce into the bottom of each ramekin.

Divide the coconut mixture evenly among the ramekins.

Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.

Bake for 30 minutes or until the flans are set.

Remove the ramekins from the water bath and let them cool to room temperature.

Refrigerate for at least 2 hours or until chilled.

To serve, run a knife around the edge of each ramekin and invert onto a serving plate.
