Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.

Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

While the cupcakes are cooling, prepare the key lime frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, key lime juice, key lime zest, and green food coloring (if desired), beating until smooth and fluffy.

Once the cupcakes have completely cooled, frost them with the key lime frosting. Garnish with additional shredded coconut or lime zest, if desired.
