Coconut Cupcakes

Preheat the oven to 350°F (175°C). Grease or line a muffin tin with cupcake liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.

Stir in the coconut milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded coconut.

Divide the batter evenly among the prepared muffin cups.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.

Once cooled, dust the cupcakes with powdered sugar and garnish with coconut flakes if desired.
