Hot cross buns are traditionally eaten on Good Friday, with the cross on top representing the crucifixion of Jesus.

  1. In a large bowl, combine the active sourdough starter, bread flour, milk, softened unsalted butter, sugar, egg, salt, cinnamon, nutmeg, and allspice. Mix until a dough forms.
  2. Knead the dough on a lightly floured surface for about 10 minutes, or until smooth and elastic.
  3. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rest for 2 hours, or until doubled in size.
  4. Punch down the dough and knead in the raisins.
  5. Divide the dough into 12 equal portions and shape each portion into a ball.
  6. Place the dough balls on a greased baking sheet, cover with a kitchen towel, and let them rise for another 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Bake the buns for 15-20 minutes, or until golden brown.
  9. In a small bowl, mix the powdered sugar and lemon juice to make the glaze.
  10. Remove the buns from the oven and let them cool slightly. Brush the glaze over the buns while they are still warm.
